Perfect Eye of Round Roast
Preheat the oven to 500°. Rub roast with oil. Mix remaining ingredients in a small bowl. Completely coat all sides of the roast with seasonings. Place roast in a 12- to 15-inch iron skillet.
Place skillet in oven and immediately reduce oven temperature to 350°. Roast 20 minutes per pound. Using a meat thermometer, cook to 125° for medium-rare beef or 135°-140° for medium. Cool 15 minutes before carving. Cut into thin slices across grain of meat.
